so what am I doing wrong, that when I pour it in glass, and let it sit for a moment, nothing changes, it stays forever this white thick liquid and wont create any foam on top
It will normally take longer than a minute to get a good head, be patient with egg white foam. Also try to close the gate on the strainer in the beginning of the pour and open it at the end. the bulk of the foam in the shaker will come out last.
@@MIXOLOGYFLAIRED without the foam, whole drink is like thicker, don;t know how to explain, like weird texture. couple days ago I tried it in a bar and it was much much smoother. Therefore my drink sat there for about 10 minutes and stayed exactly the same , so I jus dumped it out. Fresh eggs, fresh juice, only thing different is my sugar syrup, I bought it by dan sukker and it is thick syrup but gets thinner after mixing .. but that could be part of problem, all though I think there is more to that
@@johnrefe well, if you don’t use egg white it will not separate. If you’re using egg white, make sure you shake it 2 times. First without ice to combine egg with citrus for about 30seconds, then again with ice to chill.

À proper shake is incorporating air, not diluting it. The shaking technique isn't that bad but it has low to medium air incorporating and lots of dilution to it so it does the job but lacks of air. I used to shake this way and changed it because I was lacking of air. Shaking is about multiplying the amount of contacts between the ice and the liquids together with bringing air to the drink, however, you get and unwanted and watery result at the end if you shake this way. The mouvement can be quite wide and this is a good way to chill up your drink because of natural termodinamic phenomenon called entropia (basically the frictions between ice and liquid), but this does not bring much air. Going super fast is gonna bring lots of air but a lot of dilution

Agave nectar mixes well on its own and is called for directly in cocktail recipes like the Oaxaca Old Fashioned. The only reason to make Agave syrup is to cut the sweetness to match with other syrups, for instance to make Dale DeGroff's Triple Syrup.
I appreciate your comment. I feel there are different applications. Some cocktails call for it raw as you explained. Other applications like in a nightclub where speed matters and every second counts, waiting for a slow pouring agave or honey through a pour spout is just not the right way to go. Sacrifice a little quality to get the drink to the customer faster. Just one persons opinion
